{Recipe} Pistachio Financiers


Financiers are traditional tea time favourites in France. There are soft bite-sized almond cakes and this pistachio version is simply delicious.

Ingredients

2 egg whites
60g ground almond
70g icing sugar
25g plain flour
70g butter
1 tablespoon pistachio paste

Directions

Melt butter in a pan over low heat until light brown in colour and smelling of hazelnut (beurre noisette) and leave to cool

Mix ground almond, icing sugar and flour.
Add the egg whites and mix well.
Add melted butter followed by the pistachio paste and mix until well combined.
Let the mixture rest for 1 hour in the fridge.

Preheat oven to 180 degree Celsius (160 degree C for fan oven)
Grease the traditional rectangular financier moulds or any mini mould and fill with mixture.
Bake for 20 minute.
