{Recipe} Chocolate Whoopie pies

After I finished baking for my Valentine's day table I had some leftover chocolate cream cheese buttercream and I decided to finally make those whoopie pies that seem to be all the rage at the moment.

I tried this recipe from Whoopies by Ami Fawcett and I was quite pleased with it. The whoopies were soft and chocolately. I really liked the buttercream filling but next time I might try a marshmallow one.
Is the marshmallow filling a more traditional one ? They have only just starting selling whoopies here in the U.K. so I am not so familiar with them...

Classic chocolate whoopies

Will make 12 large or 24 small whoopies

200g plain flour
75g cocoa
2 teaspoons baking powder
120g butter
225g caster sugar
1 large egg
150ml milk
75ml buttermilk
pinch of salt

Preheat oven at 180 degrees C
Prepare 2 baking tray and lay with baking paper

Sift together flour, cocoa and baking powder. Add a pinch of salt.

Beat soft butter and sugar until well combined and creamy. Add the egg and beat for a further minute. Add the dry mix (flour+cocoa+baking powder) and then the buttermilk and milk.
Mix well.
Leave to rest in the fridge for about 20 minutes.

Use a spoon or a piping bag to make little ball of dough on the baking sheets (about a table spoon of dough for the small whoopies or 2 tablespoons for the large whoopies). Space them well as they will spread during baking.
NOTE: these quantities will make approximately 24 large halves or 48 little ones. So unless you have an extremely large oven, you will be baking for some time !

Bake for 8 to 10 minutes. Whoopies should be soft to touch and spring back when they are done.
Leave to 2 to 3 minutes and transfer to a cooling rack.

When cool, fill with you favourite filling and enjoy !

  1. OMGoodness! Whoopie pies are very popular here in the states, it is a Pennsylvania dutch treat! The filling is white and fluffy and very creamy. Much like a cream cheese icing. But all kinds of icings are used. Glad to see your country enjoying this yummy treat!!

  2. I've been searching for a good simple whoopie pie recipe for ages.. I made a pink raspberry buttercream for the filling, which worked well with the chocolate! Yum!
