{Recipe} Chocolate Ice Cream

We love chocolate ice cream in our household and this is our basic chocolate ice cream recipe ! I have just made a big batch of it in preparation for the ice cream party in 2 weeks...

The base is a custard to which I add chocolate. But you can make the base on its own and simply add vanilla to it to make a delicious Vanilla Ice Cream.
Use the best chocolate you can find. This time I used an extra "strong" chocolate and the result is delicious. I import this brand from France because although it is Nestle I can't source it from the UK (do let me know if you know where to find it !)
Chocolate Ice Cream

Ingredients
125g chocolate, chopped
4 egg yolks
125g caster sugar
500ml milk

You also need an ice cream maker for this recipe...

To make the custard:
Beat the egg yolk with the sugar until it turns a pale yellow.
Pour the milk in a pan and bring to the boil.
Pour the milk onto the egg mixture while beating.
Pour the mixture (egg+sugar+milk) back into the pan and slowly bring to 83 deg C. To achieve a perfect custard consistency it is important that the mixture does not heat over 85 deg C so pour it straight away into a cold dish.

Add the chopped chocolate and stir until the chocolate has melted.
Leave to cool.
When cool, refrigerate for a few hours.

Take the custard out of the fridge and sieve before pouring into the ice cream maker as per your machine's instructions. (Sieving will remove any unwanted egg "bits", this step does not take long but will give you a smooth ice cream, so it is well worth the effort)
Normally it takes the ice cream maker about 30 minutes to achieve the right ice cream consistency.
